"Individual Beef Wellingtons"
4 1 1/2"-2" Thick tenderloins of beef
In a pan, sear steaks in butter 2 to 3 minutes each side. Sprinkle with salt and pepper; remove to cool. Mix liverwurst with brandy and spread over steaks. Roll out pastry and cut into 4 squares large enough to enclose each steak.
Place steak in center of each pastry square and fold over to completely enclose. Seal seams with egg yolk-water mixture. Place on cookie sheet and bake in 400 degrees preheated oven for 20 minutes or until golden brown. (Not suitable for freezing.)
"Never Fail Chocolate Cake"
4 Tablespoons cocoa
Mix cocoa, sugar, shortening and salt. Add unbeaten eggs and beat well. Add sour milk, flour and vanilla. Beat well. Add boiling water in which baking soda has been dissolved. Pour into greased and floured 13" X 9" cake pan. Bake at 350 degrees. Begin checking after 30 minutes. (Not suitable for freezing.)
